The story of our winery begins in Valpolicella, where Valentina and Giancarlo grew up and met. Giancarlo’s family has been engaged in the wine growing sector since the 19th century, while Valentina started to develop her passion for oenology after she met her husband. In 1969 the couple decided to invest its savings in Fumane and bought 7 of the current 10 hectares located in important crus such as Monte Tenda, Monte Crosetta and Rasso. These vineyards are the most valued assets of this company and only organic agronomic techniques are applied to them. The organic certification was very close to the heart of Valentina, who strongly desired to achieve it, and is also a firm part of the whole family’s philosophy. Our goal is to tune in with nature and leave future generations with a better, healthier and richly rewarding environment. We consider ourselves wine craftsmen. We produce wines using exclusively our grapes, strictly hand harvested by a team of reliable and skilled collaborators, able to select only perfect bunches which then later will become wine. During the fermentation process, the winery is filled with an inebriating aroma of wine, fresh fruit and flowers. This is the most exciting time of the year for us and we love to share it with those who appreciate our products and our winery. Hospitality and sharing are essential values, as well as our willingness to achieve excellent results. Our approach has not a strictly commercial connotation, but it is always quality-oriented – we analyse and taste our wines before we decide when we should place them on the market, and we also perform a number of rigorous evaluations. Thanks to our accurate work we can treat the palates of our customers.

History

The organic approach begins with the very first experimentations in a vineyard close to the city of Verona and then soon in our entire estate. Organic matter is one of the fundamental parts of the soil; unfortunately in recent years the indiscriminate use of inorganic fertilisers, herbicides and pesticides, along with an inadequate restoration of the land, resulted in the generalized decrease of humus content in the soil – in particular in the Po valley – which may lead to the desertification of the land..
The company Valentina Cubi has applied for years biologic techniques in order to keep healthy soils and increase the organic matter content, thus improving their fertility.
It is fundamental to avoid the use of synthetic phytosanitary products and herbicides, which reduce soil vitality and enormously simplify the local microfauna.
For this reason, using vegetable compost enriched with microorganisms and supplying the right amount of animal humidified organic matter can help to produce an autumnal multispecies green manure characterised by a number of herbs with specific features which enhance physical, chemical and biological processes for a balanced improvement of soil vitality and fertility and preventing harmful imbalances or excesses that would then need various corrective actions.
The effects of the 500P and 501 preparations prescribed by Rudolf Steiner are important as well, as they favour the correct humidification of organic matter and the regular formation of plant architectures, thus transposing the soil features into the bunches of grapes.
Finally, supplying microorganisms on leaves and soils favours the mycorrhizal process and creates more favourable conditions for the development of pathogens, thus improving plant nutrition and health.
